Recipe Corner: Valentine’s Day Edition
Since we are in the midst of a clean eating challenge you will need to forgo the sweet treats. Here is a recipe with a little heat and some love to get you through.
Red Curry Chicken
1 lb of chicken breast or thighs(you can make kabobs out of these, just cut into small pieces)
1/2 cup coconut milk
1 clove pressed garlic
1-2 TBS Red Curry paste
Salt and pepper
Mix the everything together, put chicken in a plastic ziplock and add marinade. Let soak up the yummyness for 1-4 hours longer if you want. Broil or grill.
Pinapple Cauliflower Risotto
1 head of cauliflower
2-3 tbs coconut cream or seperated full fat coconut milk
1/2 sweet onion
1/2 can diced pinapple or get a fresh one and cut it up
2 diced carrots
1/2 cup shredded coconut
Veggie/chicken stock maybe
Cilantro for garnish
Grate cauliflower with cuisenart or box grater. Brown cauliflower, onion and carrots in oil of choice. Add in pinapple and cook down until juice is gone. Add in coconut cream or milk until cauliflower is cooked and creamy. Add stock as needed, but be careful not to add to much just enough to make it almost mashed potato consistancy.
Serve with a green salad or something else green.
The love in this recipe comes in the risoto as it takes time and some attention, the heat will be in your chicken and it will be an amazing redish pink color.
